Chicken Korma Banane ka Tarika:


Ajza (Ingredients):

- 500 grams chicken pieces

- 2 medium onions, finely chopped

- 2 tomatoes, pureed

- 2 tablespoons oil or ghee

- 1 tablespoon ginger-garlic paste

- 1/2 cup yogurt (dahi)

- 1/2 cup fresh cream (malai)

- 1 teaspoon red chili powder

- 1/2 teaspoon turmeric powder

- 1 teaspoon coriander powder (dhania powder)

- 1/2 teaspoon garam masala

- Salt to taste

- Fresh coriander leaves, chopped (for garnish)


Tayari ka Tarika (Preparation):


1. Ek kadai ya bartan mein oil ya ghee garam karein.

2. Garam oil mein pyaz ko golden brown hone tak sauté karein.

3. Ab ginger-garlic paste dal kar ache se mix karein aur bhune hue pyaz aur paste ko mila kar sauté karein.

4. Tamatar ka puree, red chili powder, haldi powder, aur dhania powder dal kar milayein. Acche se mix karein aur masala ko bhunein.

5. Ab dahi ko ek alag bowl mein achhe se phent lein aur masale mein dalein. Dahi ko ache se milakar masala ko 2-3 minutes tak pakayein.

6. Chicken pieces ko masale mein dal kar acche se coat karein. Chicken ko medium heat par 5-6 minutes tak bhunein, jab tak wo rang badalne lage.

7. Ab pan mein pani dalein, salt dalen, aur chicken ko ache se ubalne tak pakayein.

8. Chicken pakne ke baad, malai (fresh cream) dalein aur ache se mix karein. Garam masala dalen aur 2-3 minutes aur pakayein, takleef tak.

9. Chicken korma ko dhak kar halki aanch par 5-10 minutes tak pakayein, takleef tak.

10. Chicken korma ko garam naan, chawal ya roti ke saath serve karein.

11. Garnish ke liye taza kata hua dhaniya dal kar serve karein.

Step 1: Ajza (Ingredients)


- 2 cup maida (all-purpose flour)

- 2 tablespoon tail (oil)

- 1/2 teaspoon namak (salt)

- Pani (zaroorat ke mutabiq)

- 2 darmiyani aloo (potatoes), ublay hue aur mash kiye hue

- 1/2 cup hare matar (green peas), ublay hue

- 1 darmiyani pyaz (onion), bareek kata hua

- 2 hari mirch (green chilies), bareek kata hui

- 1 teaspoon adrak-lehsan ka paste (ginger-garlic paste)

- 1/2 teaspoon lal mirch powder (red chili powder)

- 1/2 teaspoon zeera (cumin seeds)


Step 2: Dough tayyar karein


- Ek bartan mein maida, 1 tablespoon tail, aur namak dal kar mix karein.

- Thora thora karke pani dalte hue, soft dough tayyar kar lein.

- Dough ko cover kar ke 15-20 minutes ke liye rakh dein.


Step 3: Masala banayein


- Ek kadai mein 1 tablespoon tail garam karein aur usmein zeera dal dein. Zeera ko thora sa bhunen.

- Bhune hue zeera mein pyaz, adrak-lehsan paste, aur hari mirch dal kar sauté karein, jab tak pyaz golden brown na hojaye.

- Ab mashed aloo, hare matar, lal mirch powder aur namak dal kar acchi tarah mix karein.


Step 4: Filling tayyar karein


- Filling tayyar hai, ise thanda hone ke liye ek taraf rakh dein.


Step 5: Samosa ko assemble karein


- Dough ko chote chote tukdon mein kaat lein aur har tukde ko bail kar patla round shape banayein.

- Round shape ko center se cut kar ke half moon shape create karein.

- Har half moon shape mein filling rakhein aur samosa ko pura fold kar lein.

- Folded samosas ke edges ko thoda sa pani se chipka lein taki samosas band rahein.


Step 6: Samosas ko fry karein


- Samosas ko medium garam tail mein deep fry karein, jab tak wo golden brown aur crispy na hojayein.

- Tissue paper par samosas rakhein taki excess oil absorb hojaye.
